In the dietary life of the Korean people, boiled rice as the main staple food and various side dishes such as soup, jang (ragout), kimchi constitute the structure of dietary life. Such dietary custom is related with the life emotions and tastes of the Korean people who have widely cultivated main crops such as foxtail millet, kaoliang, bean, barley and rice, and vegetables including Korean cabbage and radish.
Characteristic in the Korean national foods is the developed stored dishes of different kinds, especially, such fermented stored dishes as, jang, kimchi and jotgal (pickled fish) etc.
Jang had been the major source of protein for the Korean people in the past and kimchi and jotgal had been the major source of vitamin and mineral matters. The Korean hypocaust is a peculiar and characteristic one which is not available in other countries and it is very superior one.
The facility of the Korean hypocaust heats the whole area of the room floor, therefore, once it is heated, the warmth in the room lasts for a long time. Thus, the utility rate of the room is higher than the other countries heating facilities and it helps to keep the room clean, for it is heated from outside. As this heating system is useful, it is used not only in single-story houses but in high apartment buildings.
One of the admirable characteristics in the Korean nation’s dwelling is the types of the roof made in keeping with the natural environment of Korea and the life feeling of the Korean people.
The typical types of the roof of Korea are gabled roof, hipped roof and the hipped-saddled roof that combined the gabled roof with the hipped roof. Among them, the hipped-saddle roof is typical of the Korean tile-roof house for its nimble appearance, apparently flying, and beautiful and elegant appearance. Even today, it is used in modern Korean architectures as a symbol of the Korean house.
